Craving for something sweet and rich? Why not try Suji? While it is often associated in Arabic cuisine as Bubur Suji or Semolina Porridge, it is also known as Sooji/Rava kheer in Indian Cuisine.
This dessert is made by using semolina flour which comes from durum wheat. Suji uses a simple base of sugar, milk and semolina flour but it can also be flavoured by using cardamom, rose water or saffron. Instead of whole milk, evaporated and condensed milk can be used to make this dessert sweeter and creamier. Ghee can also be added to make it even more rich. To give this dessert abit more texture, almonds and raisins can be added as well.
Suji can be served warm, at room temp or even chilled. Usually this dessert is served during happy occasions such as family gatherings and especially during Ramadhan.
More than a sweet treat, Suji is a dessert that brings warmth and people together. Its creamy texture, fragrant spices and familiar flavours make it equally enjoyable during quiet moments and joyful gatherings. Whether served warm or chilled, each bite offers a simple and comforting taste worth sharing.
